Preheat the oven to 220 degrees Celsius and place a cast iron skillet in the oven to heat.
In a blender, combine eggs, milk, all-purpose flour, sugar, vanilla extract, and salt. Blend until smooth.
Carefully remove the hot skillet from the oven and add butter, swirling to coat the bottom and sides.
Pour the batter into the skillet and immediately return it to the oven.
Bake for 20-25 minutes until the pancake is puffed and golden brown.
