Heat a large skillet over medium-high heat. Add 1 tablespoon of butter.
Once the butter is melted and hot, add the bratwurst to the skillet. Sear for about 5-7 minutes, turning occasionally, until browned on all sides.
While the bratwurst is cooking, wash and halve the baby potatoes. Add them to the skillet and cook for about 10 minutes, stirring occasionally.
Add the sauerkraut to the skillet with the bratwurst and potatoes. Stir to combine and cook for an additional 5-7 minutes, until heated through.
Serve hot, garnished with chopped chives if desired.
