Drain and rinse the canned jackfruit, then use your hands or a fork to shred the jackfruit into a pulled texture.
In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the shredded jackfruit for about 5 minutes until heated through.
Stir in 0.5 cup of canned diced tomatoes, 0.5 cup of barbecue sauce, 0.5 teaspoon of garlic powder, and 0.5 teaspoon of cumin. Cook for an additional 10 minutes, stirring occasionally.
While the jackfruit is cooking, toast the bread rolls until golden brown.
Assemble the sandwiches by placing the BBQ jackfruit mixture on the toasted rolls and adding additional barbecue sauce if desired.
