Preheat your grill or grill pan over medium heat.
In a bowl, mix the chicken breast with barbecue sauce, salt, and pepper. Let marinate for 10 minutes.
While the chicken is marinating, prepare the cauliflower rice. In a pan, heat 1 tablespoon of butter over medium heat and add the riced cauliflower. Cook for about 5 minutes until tender, stirring occasionally.
Grill the marinated chicken for about 6-7 minutes on each side, or until cooked through. Remove from heat and let rest for a few minutes before slicing.
Assemble the bowls by placing a base of cauliflower rice, topping it with sliced BBQ chicken, and adding chopped bell pepper and arugula. Drizzle with additional barbecue sauce if desired.
