Preheat the oven to 200°C (392°F).
Wrap each scallop with a strip of bacon and secure with a toothpick.
Heat 1 tablespoon of butter in a skillet over medium heat. Add scallops and sear for 2-3 minutes on each side until bacon is crispy.
Transfer scallops to a baking sheet and bake in the oven for an additional 5-7 minutes until cooked through.
In the same skillet, add the remaining butter, lemon juice, and chopped parsley. Stir until butter is melted and fragrant.
Remove scallops from the oven, drizzle with lemon herb butter, and serve with microgreens on top.
