Press the tofu to remove excess moisture, then cut it into cubes.
In a bowl, toss the tofu with 1 tablespoon of olive oil, 1 teaspoon of garlic powder, salt, and pepper to taste.
Place the tofu cubes in the air fryer basket in a single layer and cook for 15 minutes, shaking the basket halfway through.
While the tofu is cooking, prepare the grains according to package instructions (e.g., brown rice or quinoa).
Chop the vegetables (e.g., bell pepper and broccoli) and set aside.
