Rinse and cook the jasmine rice according to package instructions while preparing the rest of the dish.
In a large bowl, combine chicken breast pieces with fish sauce, soy sauce, and minced garlic. Let marinate for at least 10 minutes.
Preheat the air fryer to 180°C (356°F).
Add marinated chicken pieces to the air fryer basket. Cook for 12-15 minutes, shaking the basket halfway through until cooked through and slightly crispy.
While the chicken is cooking, toss bell pepper slices with olive oil and a pinch of salt.
Add bell pepper slices to the air fryer basket in the last 5 minutes of cooking the chicken, until they are tender and slightly charred.
In a large bowl, combine cooked chicken, bell peppers, and fresh basil leaves. Toss well to combine.
Serve the Thai basil chicken and bell peppers over the cooked jasmine rice.
