Delicious and satisfying stuffed bell peppers filled with a mixture of ground turkey, quinoa, black beans, corn, and topped with melted cheese.

Preheat the air fryer to 180°C (356°F).
Cook the quinoa according to package instructions and set aside.
In a pan over medium heat, cook the ground turkey until browned and cooked through, about 5 minutes.
In a large bowl, mix together the cooked quinoa, ground turkey, black beans, corn, and one cup of shredded cheese. Season with salt and pepper to taste.
Cut the tops off the bell peppers and remove the seeds.
Stuff each bell pepper with the turkey mixture, pressing down to pack it in.
Place the stuffed peppers in the air fryer basket and cook for 10 minutes.
After 10 minutes, sprinkle the remaining shredded cheese on top of each pepper and cook for an additional 5 minutes, or until the peppers are tender and the cheese is melted.
Carefully remove the peppers from the air fryer and let them cool slightly before serving.
