In a large bowl, combine the olive oil, oregano, thyme, minced garlic, salt, and black pepper. Add the chicken thighs and coat them evenly with the marinade.
Preheat the air fryer to 200°C (392°F). Place the chicken thighs in the air fryer basket and cook for 20 minutes, flipping halfway through, until the internal temperature reaches 74°C (165°F) and the chicken is golden brown.
While the chicken is cooking, prepare the couscous according to package instructions and set aside.
In a small bowl, mix the Greek yogurt, cucumber, lemon juice, and dill to make the tzatziki sauce. Stir well and set aside.
To assemble the bowls, divide the cooked couscous evenly among four bowls. Top with the cooked chicken thighs and serve with a side of tzatziki sauce. Garnish with additional dill if desired.
