In a bowl, combine the chicken breast pieces with lemon juice, minced garlic, mixed herbs, olive oil, salt, and black pepper. Mix well and marinate for at least 15 minutes.
While the chicken is marinating, rinse the quinoa under cold water. In a pot, combine quinoa and water, bring to a boil, reduce to a simmer, cover, and cook for about 15 minutes until the water is absorbed and the quinoa is fluffy.
Preheat the air fryer to 180°C (356°F).
In a bowl, toss the bell pepper, zucchini, and broccoli florets with olive oil, salt, and black pepper.
Place the marinated chicken pieces in the air fryer basket and cook for 15 minutes, turning halfway through.
In the last 10 minutes of cooking the chicken, add the mixed vegetables to the air fryer basket and cook until tender and slightly charred.
Divide the cooked quinoa among 4 meal prep containers. Top each with the air-fried chicken and vegetables. Let cool before sealing the containers and refrigerating.
