Preheat the air fryer to 200 degrees Celsius (400 degrees Fahrenheit).
In a bowl, combine the chicken breast, olive oil, garlic powder, salt, and black pepper. Mix until the chicken is well coated.
In another bowl, toss the broccoli, bell peppers, and baby potatoes with olive oil and a pinch of salt.
Place the chicken in the air fryer basket and cook for 10 minutes.
After 10 minutes, add the vegetables to the air fryer basket with the chicken and cook for an additional 15 minutes, shaking the basket halfway through.
Check the internal temperature of the chicken to ensure it reaches 75 degrees Celsius (165 degrees Fahrenheit).
Once cooked, remove from the air fryer and let rest for a few minutes before serving.
