Preheat the air fryer to 200°C (392°F).
Peel the sweet potatoes and cut them into wedges.
In a bowl, combine the sweet potato wedges with olive oil, paprika, and salt. Toss until the wedges are evenly coated.
Place the seasoned sweet potato wedges in the air fryer basket in a single layer. Cook for 15-20 minutes, shaking halfway through, until they are crispy and golden brown.
While the wedges are cooking, scoop the avocado flesh into a bowl.
Add lemon juice and minced garlic to the avocado and mash until smooth and creamy. Adjust the seasoning with additional salt to taste.
Serve the air-fried sweet potato wedges with the creamy avocado dip.
