In a bowl, combine 0.5 cup of fish sauce, 2 tablespoons of lime juice, and 2 tablespoons of sugar to create a marinade.
Slice 500 g of pork into thin strips and marinate in the mixture for at least 15 minutes.
While the pork is marinating, prepare the pickled vegetables by mixing 1 cup of shredded carrots and 1 cup of shredded radishes (or any other preferred vegetables) with 0.5 cup of vinegar and 0.5 cup of water. Let it sit for at least 15 minutes.
Heat a skillet over medium heat and cook the marinated pork for about 10-15 minutes until cooked through and caramelized.
Slice 4 bread rolls in half and lightly toast them if desired.
Spread a layer of butter or mayonnaise on the inside of each roll, then layer with cooked pork, pickled vegetables, and a handful of fresh herbs like cilantro and sliced jalapeños.
Close the sandwiches, slice in half, and serve immediately.
