Preheat the grill to medium-high heat.
In a bowl, combine chicken breast with olive oil, salt, black pepper, and your choice of spices. Let it marinate for at least 10 minutes.
While the chicken is marinating, cook 1 cup of brown rice according to package instructions.
Chop the bell peppers and broccoli into bite-sized pieces.
Grill the marinated chicken for about 6-7 minutes on each side, or until cooked through and lightly charred. Remove from the grill and let rest before slicing.
In the last 5 minutes of grilling, add the bell peppers and broccoli to the grill until they are tender and slightly charred.
To assemble the bowls, divide the cooked brown rice among four bowls, top with sliced grilled chicken, and add the grilled vegetables. Drizzle with your favorite sauce.
