In a small bowl, mix together lemon juice, 1 tablespoon of olive oil, black pepper, and salt to create the marinade.
Place the chicken breasts in a bowl and pour the marinade over them, ensuring they are well coated. Let marinate for at least 15 minutes.
Meanwhile, prepare the vegetables by chopping bell peppers and broccoli into bite-sized pieces.
Preheat the grill to medium-high heat and lightly oil the grates.
