Significant freezer burn (dry, discolored spots or edges), dull or faded color, loss of aroma even after thawing, development of 'off' or stale flavors (rare for herbs if stored properly).
Visually check for excessive ice crystals or dry, discolored patches indicating freezer burn. When thawed, observe the color and smell for a noticeable mint aroma. If it looks very dull, has an off-smell, or no aroma, it has likely lost its quality and flavor.
Wash and thoroughly pat dry mint leaves before freezing. For convenience, chop leaves and freeze in ice cube trays with a little water, olive oil, or broth. Alternatively, freeze whole leaves spread out on a baking sheet until solid, then transfer to an airtight freezer bag, removing as much air as possible. Label and date. While frozen mint retains flavor, its texture will be softer upon thawing, making it less suitable for fresh garnishes.

There are two primary methods: 1) Wrap loosely in a slightly damp paper towel, then place in a perforated plastic bag or an airtight container in the crisper drawer. 2) Trim the bottom of the stems, place upright in a glass with about an inch of water (like a bouquet), and cover loosely with a plastic bag. Change the water daily. Both methods help maintain hydration.
